Quinoa Salad With Grilled Chicken And Vegetables
A healthy diet is important for all those who practice physical exercise. The body needs the nutrients to recover and if it doesn't have those fats, even better. In addition to being careful with what you eat, the food should be tasty and appetible, otherwise there is no desire to eat it.
Quinoa is a grain rich in protein, fibre and carbohydrates. It also contains essential amino acids, good for the body to gain energy and for muscle recuperation. Chicken is a great source of lean protein, good for helping the muscles grow. Vegetables are rich in vitamins and minerals, good to maintain the function of the body.
Ingredients:
- 1 cup of boiled quinoa
- 2 grilled and diced chicken fillets
- 1 Japanese cucumber cut into cubes
- 1 grated carrot
- 1 tomato cut into cubes
- 1/2 red onion cut into cubes
- 1/2 red pepper cut into cubes
- 1/2 yellow pepper cut into cubes
- 1/2 avocado cut into cubes
- Lettuce leaves to taste
- Salt and black pepper to taste
- Olive oil to taste
Method of preparation:
1. Cook the quinoa according to the instructions on the package and set aside.
2. Season the chicken fillets with salt and black pepper to taste and grill them in a frying pan with a drizzle of olive oil. After grilling, cut them into cubes and set aside.
3. In a large bowl, mix the cooked quinoa, grilled chicken, Japanese cucumber, grated carrot, tomato, red onion, red pepper and yellow pepper. Season with salt, black pepper and olive oil to taste.
4. Add the avocado cubes and mix gently.
5. Serve the salad over the lettuce leaves and enjoy!
